YIELD: Makes 1 8-10 oz. goat cheese log
INGREDIENTS
- 1/3 cup - dry roasted and salted pistachios, finely chopped
- 1/3 cup - dried figs, finely chopped
- 1 (8 oz.) log - goat cheese, chilled
- 1/4 cup + 1 T - Weeks Blackberry Honey
DIRECTIONS
- Sprinkle the pistachios and figs on a parchment-lined sheet pan. Remove the goat cheese from the refrigerator and using the parchment paper begin to roll up the goat cheese so that the pistachios and figs cover the sides and ends. Gently press on the parchment roll to help them adhere. Unroll the parchment from the goat cheese.
- Pour 1/4 cup honey on the bottom of a dish and place the goat cheese on top, drizzle 1 T of honey over the goat cheese. Serve with crackers or crostini and fresh fruit.

TIP
Dried apricots would also be delicious in place of the dried figs.
